Crab Cake Sandwich: Toasted Focaccia With Crab Cake, Roasted Garlic, Lettuce and Lemon

I love a good crab cake, so naturally ever since we started this blog I’ve been dying to make a crab cake sandwich. Last week-end we had out-of-town visitors begging us to make some amazing sandwiches, so I thought that would be a good time to try it. One of our friends is Indian and an ex-vegetarian so naturally this had better be good or else he might snap back (he didn’t 🙂 ). When you make anything fishy, it’s almost impossible to add too much lemon, so we made sure to soak these sandwiches good in lots of lemon juice. The slice on top is just for show and is a classical Danish garnish back home.

The focaccia was baked by Wendie, and we highly recommend making more bread at home. It’s a lost art these days, but the smell of fresh bread in the house is priceless.

Ciabatta Falafel Sandwich with Roquefort, Red Pepper And Paprika And Roasted Garlic Dressing

Well our kitchen remodel is under way now, and today our old kitchen was reduced to rubble, and placed in a giant container outside the house. We are very excited to get the new one in about 4-6 weeks, and before the demilition began we had the sanity to make a few sandwiches and pizzas to keep things interesting while we await perfection. This weekend we shall attempt some sandwiches made entirely on our BBQ, and look forward to being creating. Until then, this is a little gem we made last week, falafel (great for sandwiches), with a nice homemade yogurt dressing. We hope you enjoy it.

Veggie Sandwich with Grilled Zucchini, Mustard, Olive Oil, Olive Tapenade, Roasted Bell Peppers, Pecorino Romano Cheese, Paprika and Tarragon Mustard

Wendie said: “This is the ultimate vegetarian sandwich.  I have been threatening to make this for Anders since our recent trip to Denmark inspired us delve more deeply into the world of sandwiches.  While I am convinced that Anders’ Y chromosome predisposes him to a love of all things meat, I was convinced that even he would be wooed by the taste of freshly grilled veggies united with homemade tapenade on a lightly toasted roll. What else could you ask for?”

Anders replied: “Meat!”

That’s how our discussions sometimes goes, but Wendie always wins of course. 🙂 This is, however, a great meal. We highly recommend that you take the time to go shopping for tarragon mustard, as it works much better on this sandwich than regular plain mustard. Anders loved this sandwich, so it’s not just for vegetarians.
