OK, you have a point. This is perhaps not quite amazing enough to be on “amazing sandwiches”… But we liked it. This is a simple, plain garden variety burger, and sometimes that’s all you need to bring you back from a long day at work doing the man’s bidding. Yes, you know what we mean; cubicle work!

Ham and Chicken Sandwich with Jamaican Pineapple Ham, Buffalo Chicken, Valdeon Cheese, Caesar Dressing And Grape Tomatoes

The return of the 2009 Christmas ham is always joyful and filled with good memories. This time we unfroze a few slices for a sandwich, melt style (Meaning, lots of cheese on top). To meat-it-up, we also added some buffalo chicken from the local grocery store. Do you ever go through life, looking at the same thing over and over again, not really thinking about what it is, but still forming an opinion that sometimes turns into solid knowledge? This is the way I feel about Butterball buffalo chicken breast. I have seen it many times at the local grocery store, and never really given it a second glance. I knew, somehow, that this gigantic ball of chicken must be a chicken breast, after all that’s what it said on the package. Last week, I then decide to try it. As soon as I see the meat cut, I realize to my horror that obviously this is not a gigantic 10 pound chicken breast, but rather another conglomerate of pressed meats of unknown origin. I could have kicked myself, but the nice lady had sliced it already, so here it is.

Falafel Sandwich with Garlic-Yogurt Dressing, Lime, Pesto, Spinach and Grape Tomatoes on Ciabatta Bread with Pesto

While we do enjoy making falafels from scratch, it is a lot easier to buy them pre-made. So after an on-the-spur-of-the-moment shopping spree in the local grocery store, we found ourselves with a packet of falafels. They are quite acceptable in taste, a little wet in consistency (it’s not easy to preserve crunchiness after freezing), and overall a good experience. If you have fresh ones, by all means do use them, but for a Thursday sandwich without too much work involved, just get something like these. We find that falafel can be quite a nice change to a lot of dishes, such as salads or on sandwiches (like here).

Appetizer: Homemade Pesto, Greens, Smoked Salmon And Grape Tomato

We do love smoked salmon in our house, and it makes for great appetizers or snacks. Salmon is also fairly easy to combine with other ingredients, as long as you keep the taste influences light so as not to overpower the subtle fish taste. It works particularly well on fresh bread, or lightly toasted older revived bread.

Chunky Chili with Lima and Black Beans, Fennel, Tomatoes, Red and White Wine

If you want to make a ‘Sloppy Joe’ style sandwich, you must first make the chili. This is how we make ours! The recipe has evolved over years, since the college days when chili was the preferred antidote to pizzas. Back then, the chili was mostly meat and beans and tomatoes, but today there are a number of different beans and veggies, as well as more advanced tastes going on. We started adding wine last year, which adds a very nice flavor, and 6 months ago we started adding the sugar after we discovered that is the secret ingredient in most BBQ sauces.

Half-Moon Vegetable Pizza with Green Peppers, Grape Tomatoes and Onion

If there is one thing we can’t figure out when it comes to pizza, it’s how to make them round. Tossing them in the air is a mystery which has resulted in much swearing. We’ve finally given up, and simply roll them out. This dough pizza we wanted to make extra thin crust, but the middle of the dough got stuck while rolling. After a recovery operation, folding the dough over itself and rolling again, we ended up with this half-moon shape. Looks don’t matter, taste does (or so we tell ourselves, over and over).

Blue Cheese, Parmesan, Salami and Onion Pizza

This is quite similar to a pepperoni pizza, the favorite pizza of the US. We changed it up a bit and used a local organic sausage from the local Poway farmer’s market. We also added blue cheese and onion to give the mouth a kick to the teeth. It works brilliantly, and is one of our favorite foods.

Pizza Tomato Sauce

You need pizza sauce to make pizza, and this is a simple and good recipe for making your own homemade pizzas.

Pizza Sauce Recipe

  • 2 cans of skinned tomatoes
  • 1 tbs fennel seeds
  • 2 tsp sugar
  • 1 tsp paprika
  • 1/2 tsp curry
  • optionally: 1 tsp rajma masala

Heat all the ingredients in a pot, stirring until boiling. Turn the heat down, and let it simmer for half an hour simmering on low. If it is too wet to add to a pizza, either remove the extra liquid, or add a teaspoon of corn starch and stir it in, leaving it simmering until the liquid becomes thicker.

Appetizer: Goat Cheese and Pesto Bruschetta with Cherry Tomatoes

This is one of the three appetizers we plan on serving for Thanksgiving. The secret is to use freshly-made ingredients, and so we made our own pesto and used Super Sweet 100 tomatoes from our backyard garden. We used goat cheese, which blends very nicely with the tomato and pesto.  For bread, we stuck to a baguette.

Meatball Sandwich with Grilled Veggies, Fire Roasted Salsa, Mozzarella Cheese, Roasted Garlic, Cilantro, Green Pepper, Roasted Tomatoes

Living in San Diego means being influenced by Mexican cooking. Each street corner seems to sport a Mexican fast-food joint. Our cooking regularly employs cilantro and salsa, bothView Post of which can be tasty new ingredients to familiar meals. In this sandwich, we use both, and with the French bread, this becomes an international affair. Danish meatballs (frikadeller), Italian mozzarella, cilantro and salsa, made by a Dane and a Jamaican living in the US. It is a small world these days.
