There are times when a full sandwich is too much, and no sandwich is too little. Thankfully, for those times there are appetizers such as this. To justify adding this to the blog, I call it a ‘cracker sandwich’ (For which I received a scowl from my fellow sandwich maker). Anyway, the Saint Faron is a cheese we got at Costco this weekend. It’s very mild (So make sure to enjoy it at room temperature), and brags being a ‘French Triple Crème Cow’s Milk Cheese’. At the risk of being labelled uneducated, what is ‘triple crème‘ exactly? I mean, does it come from three different cows? Can I have their names? Someone explain this to me.

Tuna Salad Sandwich on Toasted Bagel with Cucumber, Tomato, Green Onion and Sprinkled with Sweet Curry

Our tuna salad sandwich saga continues with this fresh summer construction. A toasted bagel (one of those with everything on it), combined with fresh crunchy cucumber slices, tasty grape tomatoes, and green onions, sprinkled with a tsp of sweet curry. When you eat this, the smell of the curry adds to the experience before you even take a bite.

As you can see on the pictures, two sprouts from another sandwich somehow found themselves on this one. When we noticed, the pictures were taken, and the sandwich eaten, so please disregard the misplaced sprouts. They are harmless.

Potato Sandwich with Remoulade, Pumpkin Seeds, Roasted Garlic and Tomatoes

I love potatoes and I love bread. This sandwich brings out the best in both of them. Half a ciabatta roll, toasted (for the ‘crunch’) and with a light spread of tarragon mustard. Add potato, pumpkin seeds, tomatoes and a few more things you can read about below, and you got yourself a treat for lunch. Yes, it’s as good as it looks!

I made this after a long day at work, one of those days where you really just want to get home and sleep, but you’re starving… Having a potato handy in the fridge from dinner the night before became my saving grace.

Smoked Cream Cheese Chicken Sandwich with Cucumber and Tomato

Perfect for those chicken leftovers in your fridge, and a great sandwich for the outdoors. This specimen was consumed on a sailing trip to Flakfortet (see also “The Flakfortet” potato sandwich). It is a spinach roll, with smoked cream cheese, roasted chicken from the night before, fresh heirloom tomatoes. and mini-cucumber slices. Sprinkle generously with dukkah and olives on the side, of course.

Mesquite Wood Smoked Turkey Cheese Sandwich

This is one of my favorite lunch items in downtown San Diego. It is served, surprisingly, at Ralphs, and is not only a great sandwich, but also very affordable at just $5.99.  I particularly enjoy the mesquite wood smoked turkey sandwich on nine grain & seed bread  (Toasted), with cajun and horseradish mayo. I usually get all the veggies, lettuce, green pepper, onion, tomato, sweet pickles, olives, etc, and in this case swiss cheese.

While I can’t claim to be the chef, this sandwich was designed by me, so I think I can claim the recipe at least :)

Cilantro Lime Shrimp and Guacamole Sandwich

The past few weeks have been excessively hot.. even for the normally excessively high summer temperatures in Poway.   Case in point – two nights ago at 10:00 pm, I had all the windows and doors open to drop the house temperature to a respectable 8oF.   With temperatures like this, there is just  no way I was going to do any cooking that required more than 5 minutes over a hot stove.  This makes sandwiches an ideal meal. Paired with a side salad, it’s a wonderful way to beat the heat while taking care of nutritional needs.

Roasted tomato lends itself to many uses – the base of a soup, roasted tomato pesto, or just as-is for a sandwhich topping.  Roasting concentrates the tomato flavors, redeeming even the most lacklustre fruit from a state of blandness to delighful tomato goodness.  For this recipe, we used an assortment of heirloom tomatoes from the backyard garden.

Classic Egg and Tomato sandwich on Rye bread, served on a lettuce leaf with onions, green onions and mayonaise. Simple, easy, yummy, and a great way to eat an egg.

This sandwich is served at many danish restaurants with a good selection of smørrebrød.

The onions brings out a light ‘crunch’ that most great sandwiches should have, but too much onion can overpower the eggs, so the green onions, milder, adds the last flavor.

Egg sandwiches are often lightly sprinkled with salt, but that is an individual option.

Tomatoes on Spinach Ciabatta Roll. For this sandwhich, we recommend heirloom tomatoes at their peak of ripeness. You also want to use the tomatoes at room temperature. The flavors are more intense here. We used Black Krim grown in our backyard garden, and added a pinch of Dukkah to bring home the flavor. This is perhaps the most essential way to make a tomato sandwich, using only tomatoes, and it can really only be pulled off succesfully when they are very fresh and tasty.

Spanish Omelette Sandwich

While this is really more of an omelette than a sandwich, it still has the basic makings of a classic. The Spanish omelette includes fried potatoes, onions and eggs, and is prepared in a pan in the oven. Topped with tomato sauce, fresh greens and air-dried Spanish ham, it is absolutely delicious by itself. However, put it on bread, and you have a sandwich from heaven (or Spain).
