Review: ‘Luxus Bagel’ at the Bagels Corner In Copenhagen, Denmark

There are some thinks that don’t translate so well across cultures. Bagels might be one of them. It was a dreary afternoon in Copenhagen, Denmark, when I walked into the Bagels Corner. A bit hungry I could not get myself to settle for a plain cream cheese bagel, so instead I opted for the luxury bagel (Choice of smoked salmon, shrimp, pesto chicken, Mexican chicken, etc). I decided on pesto chicken, and selected a whole-wheat bagel with rolled oats on top. Looked great. Then the lady asked me for what type of cream cheese I wanted. Cream cheese? Whaaaat? I decided to see where this would go, so I picked the herb-cream cheese. She added a generous layer. Then the pesto chicken (lots of it), then lettuce, cucumber, corn, and finally she asked me to pick a dressing. I selected the curry dressing. Again she added a generous layer on top, and closed up the bagel. Oh dear!

The Big Bad Wolf Burger

Sometimes a man needs to be a man, and that’s when he makes “The Big Bad Wolf Burger“. Oh yeah, 1/2 pound of patty with basil, cilantro, oven roasted garlic and blue cheese chunks. What a great 4th of July celebration that was. Inspired by the moment, I topped it off with crispy hash browns and a jackfruit/avocado rough guacamole. I can’t even begin to tell you how good this burger is, but this is so far the best burger I’ve had in my life. The jackfruit guacamole sweetness perfectly blends with the spicy mayo, the juicy patty, and the crunchy hash browns. These are the times when I think back to all the missed opportunities of my childhood to celebrate with awesome burgers, the food of men 😉

Grilled Eggplant Crostini Appetizer

Inspired by Jamie Oliver’s book “Jamie’s Italy” this is one of our favorite appetizers so far this year. It also looks beautiful. The crunchy toasted pane siciliano bread and the smoothness of the eggplant (or Aubergine as we call it in Denmark), goes very well together and fills your mouth with flavor and adventure. Eggplant seems to be largely a forgotten vegetable in the US, at least in SoCal (Southern California), and really it’s a wonderful ingredient in many dishes. People, wake up and smell the eggplant!

Pizza: Prosciutto, Sauteed Garlic Mushrooms, Mascarpone/Pesto Cheese, Roasted Garlic, Goat Cheese

A great tasting pizza for every occasion. This is fairly simple to make except for the dough, but places like Trader Joe’s now sell pizza dough which should make this super easy. We made this pizza as part of a giant birthday party involving 8 other pizzas which you can find elsewhere on amazing sandwiches.

Review: Cavallino Bresaola Pizza Sandwich

When I grew up in Denmark, being a student, one of my favorite meals was take-out pizzas. Each block seemed to have a pizzeria back then, each making essentially the exact same pizzas. They were delivered in cardboard boxes, and inevitably took on the taste of the box. Thus, they were named among students “cardboard-box pizzas,” for their taste, not for their delivery method. On my last trip home, I got a craving for a cardboard pizza. I’ve had the craving before, got the pizza, and regretted it. I guess my taste buds have evolved. This time, I decided to go for a pizza-sandwich from a local shop on Frederiksberg in Copenhagen; Cavallino.

Caramelized Onion Pizza with Roquefort and Roasted Garlic and Pesto-Mascarpone Sauce

Caramelized onions are such a treat but requires good quality sweet and savory onions to really bring out the best taste of the food. They go extremely well with mild blue cheese, such as the Roquefort we used here. The first time we really discovered the joy of caramelized onions was at a visit to the farmers market in Temecula, Ca. The ‘strawberry lady’ had brought some gigantic onions that she was raving about. She told us to go home and slow-cook them (caramelize), and basically just eat onion for dinner. We did almost that, but added a steak too (man must eat). However, since then we regularly enjoy this often overlooked treat in our cooking. Most people probably don’t realize how easy it is to make amazing food with something as cheap and simple as onions, so hopefully this can server as inspiration.

Roasted Pork Sandwich With Tabouleh Salad, Italian Salsa Verde And Swiss Chard Side Dish

This sandwich is an imprompty improvisation made from ingredients we found around the house. The roast pork is from the night before as is the tabouleh. The Italian Salsa Verde is from our wedding, where is was both served for dinner and given as a gift to the guests. The Swiss chard is from our vegetable garden, and the roasted garlic- well let us just say we make sure never to run out of roasted garlic.

Pizza Recipe: Black Forest Ham, Red Onions, Heirloom Tomatoes, Sautéed Garlic Mushroom, Jarlsberg/Parmesan Cheese, Peperino Seeds (pumpkin), Pesto/Mascarpone Sauce, Roasted Garlic

This pizza makes for an excellent dinner if you are having a few friends over to share a nice bottle of Barolo. The black forest ham is great on sandwiches, and excellent on pizza. It’s not overly salty and thus goes really well with the veggies. As always, enjoy making pizza, have some fun, and don’t be afraid to experiment a little. Pizzas are the Chef’s playground, they are very hard to mess up, and everyone always enjoys fresh-baked bread. Just buy decent ingredients, and kick loose. We made this pizza on the spur of the moment, with ingredients we mostly ‘found’ in the kitchen. Adding Peperino seeds was purely because we had some. Black forest ham? We had some. Green bell pepper? Yup, we had some. That’s how we make pizzas, and the best ones go on the blog for you guys.  So go crazy tonight. Make your own pizza, or try this one.

Ham And Prosciutto Sandwich With Goat Cheese, Roasted Garlic And Blueberry Guacamole

“A Winter’s Sandwich”. Granted, in San Diego, winter is when the temperature drops to 50 degrees, and a storm is when we get 2 inches of rain and traffic slows down to 63 mph. We have it easy. This is a sandwich we made mostly from leftovers, some ham, some prosciutto, and half an avocado. We have pretty good leftovers I guess. It was an excellent afternoon in the low winter sun, with a warm sandwich and a glass of red wine in the swing. Life’s good.

Pizza Recipe: Green peppers, Tomatoes, Olives, Parmesan/Pecorino Romano Cheese, Grilled Chicken

One of the pizzas from Wendie’s surprise birthday party, this one has some grilled chicken (with a very nice spice blend including smoked paprika), two cheeses, olives, tomatoes, green peppers and onions. The dough is a pizza dough with honey I sort-of invented (based loosely on our Lavash crackers recipe), and the tomato sauce has a wide range of spices, most noticeably a hint of fennel.  We had 13 guests and I made a total of 9 pizzas and I was stunned that there were almost no leftovers. I really had expects to fill the freezer too, but at least everyone had a great time. Next time I’ll make more!
