Our first creation introducing our Mascarpone Pesto, which turned out to be a brilliant spread for sandwiches and even pizzas. This is one of our leftover turkey sandwiches from Thanksgiving, a fresh creation with a little crunch from the cucumber, and a lot of taste from the pesto.
Turkey Sandwich On An English Muffin With Mascarpone-Pesto, Cucumber, Cranberry Relish and Avocado
Turkey Sandwich Recipe
- 1 English muffin
- 1 tbs mascarpone
- 1 tbs pesto
- 1 slice of turkey
- 3-4 thin cucumber slices
- 1 tbs cranberry relish
- 1/2 avocado
Mix the mascarpone and pesto with a fork and you got our famous (to be) mascarpone pesto.
Cut open the muffin, and spread the mascarpone pesto on both halves. On the bottom half add cucumber, turkey, spread the cranberry relish, and top with slices avocados. Close the sandwich and enjoy.
Thanksgiving Turkey was all eaten, so instead we made another one a couple of days later. Nice !
