Dukkah Egyptian Spice Blend

Dukkah is an Egyptian spice blend that is just perfect for many sandwiches. It is in no means traditional, but represents how new influences from immigrants are constantly shaping ‘the sandwich’. Dukkah is made from toasted nut, toasted cummin seeds and spiced, and has a mild, flavorful taste to it, as well as a slight crunchines which is great on softer sandwiches such as “The Flakfortet”.

Dukkah can be made a variety of ways, but this one is our favorite for sandwiches:

Recipe Ingredients

  • 1 tablespoon cummin seeds
  • 2 tablespoons koriander seeds
  • 1 tablespoon cinnamon
  • 1/2 tablespoon black pepper
  • A pinch of cummin powder
  • 4 table spoons sesame seeds
  • 4 table spoons of nuts, preferably hazelnuts
  • Fresh leafs of thyme, mint, oregano or others as you like
  • 2 table spoons of salt

Preparation

Roast the spices, nuts and seeds over light heat until slightly golden. Blend the mix with the herbs and salt in a blender until they become rough.

Do not blend them for too long, the largest pieces should be the size of 1/4 a pepper corn.

Be sure to store the Dukkah in a dry spot.
