Caprese Panini Sandwich

We love caprese salads so much we had Phil’s BBQ change their menu and serve it at our wedding (They did a great job too). So, it should come as no surprise that we had to try and turn the art of the caprese into a sandwich. A panini sandwich to be exact. It has all the classic ingredients: Mozzarella, tomatoes, basil, olive oil and balsamic vinegar. For the bread we went with our own homemade pesto-sourdough bread, but any regular sourdough will do just fine.

Chicken Salad Sandwich On Sourdough Bread With Anis Tomato Sauce, Fried Onions And Pepitas Seeds

Leftover chicken is fantastic. Carefully pick all the little pieces of meat off, and make yourself a nice chicken salad. It’s very easy and simple, and we quite frankly look forward to the day after the roast as much as the roast itself. We have fallen in love with pepitas seeds (aka pumpkin seeds): These seeds are fantastic on sandwiches, as they provide some ‘crunch’ and taste great on top. We find them to be very under-utilized and the next experiment will be to try them on pizzas. We already know they work wonders on Lavash crackers. Posting this recipe makes us long to have a kitchen again, as currently everything we have is torn out and dumped. Over the next four weeks, we hope our fantastic contractor will be done building it back up, with lovely Calacutta marble counter tops and custom cabinets. Ahhh dreams…

Pepper Ham Sandwich With Tarragon Salad Dressing, Cheese, Roasted Garlic And Smoked Paprika

One of our crazy experiments finally paid off. The addition of the salad dressing to this bread takes this simple sandwich to a whole new level. The bread, after toasting, is moist but yet crunchy. The dressing adds a ‘zing‘ to the ham. This sandwich reminds us of Woodstock: a mixed bag of nuts making sweet music together. Feel the love, add the dressing!

Cheese Kafta Burger with Grape Tomatoes, Roasted Garlic, Olive Oil, Thai Basil, Grape Tomatoes and Spicy Light Yogurt Dressing

A Kafta (or Kofta or kūfta, is Persian in origin. کوفتن (Kuftan) means “to beat” or “to grind”, according to WikiPedia. One could say that a Kafta patty is like a spicy meatball. In any case, it’s delicious, and since we recently made some, a wonderful Kafta Burger (ok, maybe more of a sandwich, given the bread) is in order. We made our own version of the traditional yogurt dressing, because we can. We love this Middle Eastern food so in the future expect to see more recipes like this. We think Middle Eastern food should be a food group!

Veggie Sandwich with Grilled Zucchini, Mustard, Olive Oil, Olive Tapenade, Roasted Bell Peppers, Pecorino Romano Cheese, Paprika and Tarragon Mustard

Wendie said: “This is the ultimate vegetarian sandwich.  I have been threatening to make this for Anders since our recent trip to Denmark inspired us delve more deeply into the world of sandwiches.  While I am convinced that Anders’ Y chromosome predisposes him to a love of all things meat, I was convinced that even he would be wooed by the taste of freshly grilled veggies united with homemade tapenade on a lightly toasted roll. What else could you ask for?”

Anders replied: “Meat!”

That’s how our discussions sometimes goes, but Wendie always wins of course. 🙂 This is, however, a great meal. We highly recommend that you take the time to go shopping for tarragon mustard, as it works much better on this sandwich than regular plain mustard. Anders loved this sandwich, so it’s not just for vegetarians.

Ham and Mozzarella Cheese Sandwich with Sweet Basil Leaves, Steamed Asparagus, Tomato, Dukkah and Mustard

Growing up, I believe I had ham and cheese sandwiches maybe three times. My mom had found a recipe in a cookbook, and one day she announced she was going to make me a Hawaiian sandwich (The recipe included a piece of slices pineapple from a can, thus Hawaii). It was great, but once you open a can of pineapples you are committed to doing something with the remaining 9 slices, so my mom quickly stopped making the sandwich. A couple of weeks ago I had a dream about it (the dream also involved Jay Leno having purchased a personal Nuclear Missile painted bright red with warning signs, which was bolted down in his back yard with chains. Don’t ask, it was a dream). As you can imagine, it got stuck in my subconsciousness. I know, dreaming of sandwiches probably means we’re spending too much time writing this blog. Anyway, here is my variation of a Ham and Cheese Sandwich, without the pineapple.
