Ham And Prosciutto Sandwich With Goat Cheese, Roasted Garlic And Blueberry Guacamole

“A Winter’s Sandwich”. Granted, in San Diego, winter is when the temperature drops to 50 degrees, and a storm is when we get 2 inches of rain and traffic slows down to 63 mph. We have it easy. This is a sandwich we made mostly from leftovers, some ham, some prosciutto, and half an avocado. [...]

Pepper Ham Sandwich With Tarragon Salad Dressing, Cheese, Roasted Garlic And Smoked Paprika

One of our crazy experiments finally paid off. The addition of the salad dressing to this bread takes this simple sandwich to a whole new level. The bread, after toasting, is moist but yet crunchy. The dressing adds a ‘zing‘ to the ham. This sandwich reminds us of Woodstock: a mixed bag of nuts making [...]

Falafel On Ciabatta Bread Sandwich With Roasted Garlic, Chili Sauce and Italian Salsa Verde

There are so many ways one can use falafel to make sandwiches besides the traditional pita bread. Here we have combined it with Italian ciabatta bread because we love that, hot chili sauce because it’s traditional for at least the European Pita style, roasted garlic because it complements the falafel well and Italian Salsa Verde because it [...]

Sandwich Recipe: “The Grey Lady” – Truffle Pâté On Dark Rye Bread With Ducks Fat, Roasted Garlic And Topped With Onions and Olive Oil

The most common sandwich in Denmark is probably the liver pâté Sandwich. Every school kid knows it, and often hates it due to the sometimes bare-bones minimum effort put into making it. This sandwich here we call “The Grey Lady”, and it’s a play on the traditional liver pâté ‘blah’ version – A serious upgrade if you [...]

Appetizer: Genoa Salami and Roasted Garlic on Baguette with Architoke Lemon Pesto

This is a simple to make appetizer that looks great and taste even better. We used architokelemon pesto (Trader Joe’s), but regular pesto would make an equally good sandwich. We just like to mix things up a bit… that and use the multitude of spreads we have from our over exuberant grocery shopping.  The Genoa salami is [...]

Meatball Sandwich with Grilled Veggies, Fire Roasted Salsa, Mozzarella Cheese, Roasted Garlic, Cilantro, Green Pepper, Roasted Tomatoes

Living in San Diego means being influenced by Mexican cooking. Each street corner seems to sport a Mexican fast-food joint. Our cooking regularly employs cilantro and salsa, bothView Post of which can be tasty new ingredients to familiar meals. In this sandwich, we use both, and with the French bread, this becomes an international affair. [...]

Cheese Kafta Burger with Grape Tomatoes, Roasted Garlic, Olive Oil, Thai Basil, Grape Tomatoes and Spicy Light Yogurt Dressing

A Kafta (or Kofta or kūfta, is Persian in origin. کوفتن (Kuftan) means “to beat” or “to grind”, according to WikiPedia. One could say that a Kafta patty is like a spicy meatball. In any case, it’s delicious, and since we recently made some, a wonderful Kafta Burger (ok, maybe more of a sandwich, given the [...]

The Ultimate Seared Salmon Sandwich on a Sesame Bagel with Roasted Garlic, Roasted Vegetables, Shredded Primadonna Cheese and Pear

We eat a lot of salmon in our house; smoked salmon, grilled salmon, and last night seared salmon. So we had to try and see if we could turn some of the leftovers into a delicious second-day sandwich (It’s what we do after all). In this case, we have a piece of seared salmon with [...]

Homemade Light Yogurt Cheese with Green Onions and Roasted Garlic

I always loved the concept of being able to make our own cheeses, I mean, imagine the possibilities! Beer cheese, roasted garlic cheese, extra smelly poppy seed cheese, and then reality usually sets in. I have no clue how to make ‘real’ cheese, and while that may be a project worth pursuing someday, it’s not [...]

‘The Hallelujah’ Cod Roe Sandwich with Parmesan Crisp

Open faced sandwiches can be beautifully stacked creations, but when squeezed into a lunch-bag, carried by 10-year olds biking to school in a backpack and thrown in a community refrigerator, open-faced sandwiches may not be the first choice of lunch.

Not so for my mom. She was a firm believer in open-faced sandwiches and made them [...]

The ‘Not Quite a Panini’ Ham and Cheese Panini Sandwich with Roasted Garlic, Onion, Sun Dried Tomato Pesto, Blue Stilton and Feta

Excited about the prospect of making paninis, and after holding out for a few weeks, we finally decided to get a panini press (well, Anders decided ). So down to the nearest Target and what do they have? Shelves up and down stacked with George Foreman grills. Now I didn’t grow up in the US so I [...]

Mashed Potato Sandwich with Beef Jerky, Mayonnaise, Roasted Garlic and Parmesan

If you are following our musing on this blog, you know by now that Anders looooves mashed potato sandwiches and we both love roasted garlics. So it should come as no surprise that we at some point had to mix the two. Of course, we also enjoy cheese, so this sandwich was inevitable. In a [...]

Danish Meatball Sandwich with Blueberries

It was Tuesday, and I want to write it was raining cats and dogs, but I live in San Diego so the weather was really very nice, just like the last 6 months or so. In any case, I got a crazy craving for Danish meatballs, and on my way home from work I had [...]
