Prosciutto Pizza with Pesto and Portobello Mushrooms

We recently went on a short weekend getaway to Santa Barbara, and on the way home we decided to stop by the Mario Batali pizzeria in Los Angeles called “Mozza.”  We shared a Fried squash blossoms with ricotta pizza which was excellent, but did lack a little bit of oomph. It was bland I guess, but good. We were sitting at the bar, watching the chefs prepare the dough, and learned a new technique to keep the bubbles in the edge. So we thought we would give it a try, and make a similar pizza in style, but with much more taste in it.

Pizza: Apricot with Prosciutto, Thyme and Arugula

As we promised, we will be posting pizza recipes from all of our Pizza Cookoff Fridays. Actually, I should confess that that title is the more sanitized and hence publishable version of the actual title.  Here’s another of our creations – this was week 2. This is a sauce less pizza (distinct from the saucy pizza with all her insolence and impertinent attitudes :-)) that we find works best early in the evening of pizza debauchery. Light and pleasing, it was a nice introduction and palate opener to the heavier pizzas that were to follow that night.

Figs, Prosciutto, Blue Cheese, and Arugula Sandwich

It’s that time of year in our local farmers’ markets.  Our longer than average spring has given way to summer and with it has come one of the fruits that I only started eating when I moved to California – figs, glorious figs.   There are some fruits whose appearance and tastes you can describe by comparing it to another. But a fig… Nothing tastes like a fig. It just is.  Figs are popping up all over and once again, I am beginning to flirt with the idea of adding a tree to my garden.  Until then though, I have kind friends who help satisfy my cravings by sharing from the bounty of their own gardens.  This sandwich is the result of one such gift – a basket of black mission pigs.

While there are many ways to add figs to your diet, this is by far my favorite. The saltiness of the prosciutto, creaminess of the Cambazola (a soft ripened triple cream blue cheese) and the nuttiness of arugula – what at taste sensation. If ever a sandwich could be described as sensual, then this is it.

Pizza: Prosciutto, Sauteed Garlic Mushrooms, Mascarpone/Pesto Cheese, Roasted Garlic, Goat Cheese

A great tasting pizza for every occasion. This is fairly simple to make except for the dough, but places like Trader Joe’s now sell pizza dough which should make this super easy. We made this pizza as part of a giant birthday party involving 8 other pizzas which you can find elsewhere on amazing sandwiches.

“The Square Foot Of Goodness Pizza” Recipe: Goat Cheese, Prosciutto and Heirloom Tomatoes

I don’t know how it’s possible to cut prosciutto as thin as they do, but it’s truly amazing that any knife can do it. My theory is they cut it frozen, but I’m not sure. I wish I could buy prosciutto in thicker pieces as I think that would work wonders on pizzas and sandwiches. But, alas, one can only dream on and work with what one is given. So, this pizza is made from wafer-thin prosciutto slices (vaguely reminiscent of wafer-thin mints). This is essentially a very basic pizza with just a few key ingredients, and it works like a charm. Goat cheese is fantastic on pizzas, and doesn’t overpower the prosciutto at all.

Ham And Prosciutto Sandwich With Goat Cheese, Roasted Garlic And Blueberry Guacamole

“A Winter’s Sandwich”. Granted, in San Diego, winter is when the temperature drops to 50 degrees, and a storm is when we get 2 inches of rain and traffic slows down to 63 mph. We have it easy. This is a sandwich we made mostly from leftovers, some ham, some prosciutto, and half an avocado. We have pretty good leftovers I guess. It was an excellent afternoon in the low winter sun, with a warm sandwich and a glass of red wine in the swing. Life’s good.
