Jamie’s Bruschetta Appetizer

This is another of Jamie Oliver’s recipes we decided to make along with the “ Grilled Eggplant Crostini Appetizer” and the “Fava Bean Crostini Appetizer” both from his delicious book “Jamie’s Italy“. It’s basically tomatoes, basil olive oil and a slice of bread. The key is as always to use great ingredients for great results. We tweaked it a little like we always do since we believe in creative liberties.
And today we just launched the free Amazing Sandwiches iPad application. [...]

Grilled Salmon With Fava Beans, Parmesan And Radish Sandwich

This sandwich was really just a quick lunch-snack to keep us going through a long day of yard work. Putting down the gloves after weeding the tomato garden we found a bit of leftover grilled salmon from the night before, some veggies, and voila, a sandwich was born. When I grew up in Denmark, my mother tended to make the same sandwiches day after day. Liver pate sandwich, potato sandwich, Russian salad sandwich, chocolate sandwich (dessert). Rinse, repeat. Now, with [...]

Sandwich With Smoked Salmon And Cilantro Mayonnaise

How many ways can you make a smoked salmon sandwich?  It turns out there are many - or so my search on Tastespotting revealed.  Tastespotting is pure visual food pornography – some awesome photos of really great food with popularity driven by the online food community. We love it and have had a few of our own creations featured there.  Sometimes I am just starved for inspiration. When we first started this ambitious blog, I thought coming up with 100 sandwiches [...]

Hummus, Grilled Feta and Roasted Pepper Sandwich

A few weeks ago, we had a friend visiting for the weekend.  He is a recent convert to the omnivore lifestyle – after over 30 years of a purely vegetarian diet.  Food is nearly like a religion and each style has its adherents who hold to it with zeal and conviction that borders on fanaticism.  So when our friend converted, we were so thrilled that he had chosen to walk the other side that we now consider it our mission to ensure [...]

Review: ‘Luxus Bagel’ at the Bagels Corner In Copenhagen, Denmark

There are some thinks that don’t translate so well across cultures. Bagels might be one of them. It was a dreary afternoon in Copenhagen, Denmark, when I walked into the Bagels Corner. A bit hungry I could not get myself to settle for a plain cream cheese bagel, so instead I opted for the luxury bagel (Choice of smoked salmon, shrimp, pesto chicken, Mexican chicken, etc). I decided on pesto chicken, and selected a whole-wheat bagel with rolled oats on [...]

Grilled Eggplant Crostini Appetizer

Inspired by Jamie Oliver’s book “Jamie’s Italy” this is one of our favorite appetizers so far this year. It also looks beautiful. The crunchy toasted pane siciliano bread and the smoothness of the eggplant (or Aubergine as we call it in Denmark), goes very well together and fills your mouth with flavor and adventure. Eggplant seems to be largely a forgotten vegetable in the US, at least in SoCal (Southern California), and really it’s a wonderful ingredient in many dishes. [...]

Caprese Panini Sandwich

We love caprese salads so much we had Phil’s BBQ change their menu and serve it at our wedding (They did a great job too). So, it should come as no surprise that we had to try and turn the art of the caprese into a sandwich. A panini sandwich to be exact. It has all the classic ingredients: Mozzarella, tomatoes, basil, olive oil and balsamic vinegar. For the bread we went with our own homemade pesto-sourdough bread, but any [...]

Fava Bean Crostini Appetizer

This recipe originally comes from Jamie Oliver, from his book “Jamie’s Italy“. We recently bought it and very quickly fell in love with his down-to-earth simple taste foods. Absolutely gorgeous. This is how we made our fava bean crostini, which turned out beautifully. In the background, you’ll notice some other crostinis which were also inspired by Jamie and which we will write about in future posts.

Rhapsody In Green: Grilled Zucchini Sandwich

Many of the sandwiches on this blog are the result of a specific plan and shopping trip to realize an idea that one or both of us have. I’ll be sitting at work and have an idea that just must be pursued. More often than not, this means I have to make a trip to the grocery store to purchase one of more of the critical component for the dreamed-up sandwich. Other times, a sandwich just sort of emerges from [...]

Danish ‘Horn’ Sandwich With Crayfish Tail Salad And Lovage

The loveliness of Denmark is much reduced by the frequent rains, but infinitely improved by the bakery on every block. This sandwich revolves around the ‘horn’, a roll shaped a little like a horn, and covered in puppy seeds (‘birkes’ we call them in Denmark). The crayfish tail salad is from the local fish-monger, and tasted delicious.

Pizza Recipe: Black Forest Ham, Red Onions, Heirloom Tomatoes, Sautéed Garlic Mushroom, Jarlsberg/Parmesan Cheese, Peperino Seeds (pumpkin), Pesto/Mascarpone Sauce, Roasted Garlic

This pizza makes for an excellent dinner if you are having a few friends over to share a nice bottle of Barolo. The black forest ham is great on sandwiches, and excellent on pizza. It’s not overly salty and thus goes really well with the veggies. As always, enjoy making pizza, have some fun, and don’t be afraid to experiment a little. Pizzas are the Chef’s playground, they are very hard to mess up, and everyone always enjoys fresh-baked bread. [...]

Corned Beef Burger with Mayo-less Coleslaw

Just for fun, we thought we would ask if Costco would publish one of our sandwiches. That was in November 2009.  Imagine our excitement when they said yes! So, due to their long production time, we were scheduled for the March issue of the Costco Connection magazine. The editor asked us if perhaps we could make a St. Patrick’s day inspired sandwich, with corned beef. Of course we could, and with a deadline of mid-january, our Christmas consisted of making [...]

Ciabatta Falafel Sandwich with Roquefort, Red Pepper And Paprika And Roasted Garlic Dressing

Well our kitchen remodel is under way now, and today our old kitchen was reduced to rubble, and placed in a giant container outside the house. We are very excited to get the new one in about 4-6 weeks, and before the demilition began we had the sanity to make a few sandwiches and pizzas to keep things interesting while we await perfection. This weekend we shall attempt some sandwiches made entirely on our BBQ, and look forward to being creating. Until [...]

Burger with Roasted Garlic Mayo and Caramelized Onions

This burger looks quite simple, but the onions make it very moist and delicious while the roasted garlic gives it a great taste. This is definitely one of our favorite burgers so far. In the next few weeks our kitchen is being renovated, and we’re not sure how we can keep up our frantic sandwich making pace. We will have access to an outdoor BBQ with a side stove, and… restaurants. Idea for BBQ sandwiches/burgers that can be easily prepared [...]

Sautéed Zucchini with Garlic and Lemon

This being winter, we thought we would provide a recipe for a summer garden favorite. And no, we do not find anything incongruous about this. What better time to start dreaming about the goodies of summer than now when the cold seems interminable. Okay, so as people lucky enough to live in San Diego which is as close to weather perfection as it ever gets in the US, we do not really experience winter – at least not of the [...]
