Sandwich With Smoked Salmon And Cilantro Mayonnaise

How many ways can you make a smoked salmon sandwich?  It turns out there are many - or so my search on Tastespotting revealed.  Tastespotting is pure visual food pornography – some awesome photos of really great food with popularity driven by the online food community. We love it and have had a few of our own creations featured there.  Sometimes I am just starved for inspiration. When we first started this ambitious blog, I thought coming up with 100 sandwiches would be itself an epic feat. Now as we approach the 200 sandwich mark, I marvel at some of the creations that we have come up with. Anders’ Big Bad Wolf Burger is one such marvel.  As you can imagine, with this many sandwiches behind us, it becomes increasingly difficult to come up with a creative (and postable) sandwich.  When those moments happen, I turn to the Internet.  Today it was Draganabakes by way of  a photo on Tastespotting.   That recipe included a shallot mayonnaise. With the abundance of cilantro from my last run to the grocery store, I decided to whip up some cilantro mayonnaise instead.

Crab Cake Sandwich: Toasted Focaccia With Crab Cake, Roasted Garlic, Lettuce and Lemon

I love a good crab cake, so naturally ever since we started this blog I’ve been dying to make a crab cake sandwich. Last week-end we had out-of-town visitors begging us to make some amazing sandwiches, so I thought that would be a good time to try it. One of our friends is Indian and an ex-vegetarian so naturally this had better be good or else he might snap back (he didn’t :-) ). When you make anything fishy, it’s almost impossible to add too much lemon, so we made sure to soak these sandwiches good in lots of lemon juice. The slice on top is just for show and is a classical Danish garnish back home.

The focaccia was baked by Wendie, and we highly recommend making more bread at home. It’s a lost art these days, but the smell of fresh bread in the house is priceless.

Wendie bought these avocados for a salad, and I couldn’t resist the temptation to toast some bread and make a few avocado appetizers. Some would call them mini sandwiches. They’re dead simple and very refreshing when the weather is hot and you have a Sunday evening on the patio with a glass of red wine and Clapton and Bob playing in the background.

Liver Pâté Sandwich With Toasted Walnuts And Sautéed Leeks With Lemon And Grilled Zucchini

Call me crazy, but I just love the dark brown parts of liver pâté. I realize that may not be the preference of most other sane people, but what can I do against such deliciousness. So these pictures may not do full justice to the wonderful slice of Maria’s liver pâté, but I can assure you that once you bite into this little black diamond, your buds will thank you.

The sautéed side of zucchini with garlic and lemon matches perfectly the sautéed leeks and roasted walnuts.

“A Winter’s Sandwich”. Granted, in San Diego, winter is when the temperature drops to 50 degrees, and a storm is when we get 2 inches of rain and traffic slows down to 63 mph. We have it easy. This is a sandwich we made mostly from leftovers, some ham, some prosciutto, and half an avocado. We have pretty good leftovers I guess. It was an excellent afternoon in the low winter sun, with a warm sandwich and a glass of red wine in the swing. Life’s good.

It’s easy to buy hummus in a store, but it’s almost as easy to make it, and much more fun. This is a call to action; stop buying hummus!

All it takes to make are chickpeas, lemon juice, olive oil, tahini and garlic. Plus, add sun-dried tomatoes and you have sun dried tomato hummus. We use fresh cilantro or parsley as a topping, with a few roasted pine nuts, and you got yourself a really affordable and amazing appetizer dip. Naturally, we will be using some of this on our upcoming sandwiches :-) .

Sautéed Zucchini with Garlic and Lemon

This being winter, we thought we would provide a recipe for a summer garden favorite. And no, we do not find anything incongruous about this. What better time to start dreaming about the goodies of summer than now when the cold seems interminable. Okay, so as people lucky enough to live in San Diego which is as close to weather perfection as it ever gets in the US, we do not really experience winter – at least not of the snowmageddon variety.  Anyway, one of the veggies that will reward you with copious production is the zucchini. Two plants can produce enough for a family of four for the growing season. With our limited space, we’ve regretfully stayed away from it. Our rationale – we have a well stocked market within 2 minutes walk of our house and it’s pretty hard to give up tomato space.   So since we love zucchini but don’t always have it growing in the garden, we are so happy to be able to purchase was needed.

This little side dish is so simple, tasty and healthy. It is just bursting with flavor that we almost want to do a little dance as we eat it. Yes, it is that good.

Beef Round Steak Sandwich with Cuban-Inspired Dipping Sauce And Blue Cheese

While driving home from an exhausting day shopping for a new kitchen (who knew there were so many options for beveling), we passed Miami Grille. Well, we passed were it used to be before it went out of business. I guess Poway wasn’t the right place for a $15 sandwich place after all (and let’s not forget tax and tips!). Anyway, this gave us a sudden craving for a Cuban sandwiches, which as we neared our home faded into a craving for ‘something Cuban inspired.’

So, browsing the web for a couple of base sauces, we read them, ignored most, and invented our own. We made both a marinade and a dipping sauce, marinated the meat overnight, and put together this sandwich the next day. It was moist, tender, and awesomely garlicky. Love it.

For the vegetarians out there, you can’t go wrong with a delicious portobello mushroom burger. This is one of our favorite sandwiches, for yes, a burger is also a sandwich, much like a Lada is also a car (although reluctantly). Whenever we see fresh portobello mushrooms we try to secure a few for grilling. They are simply delicious when soaked in the right marinade, and actually taste better than most meat patties. The grilling really brings out the best in these shrooms, and you get to enjoy the wonderful colors and look of this gigantic Agaricus bisporus.

This sandwich is one of the many that can be created almost entirely from Costco. No, they don’t sponsor us.  We just like a lot of their foods (psst, Costco, if you read this, get in touch!!).   We particularly love it when they feature cheeses on the tasting floors. In fact, we get practically giddy like children in a candy store. This past weekend, we walked in and were greeted with the sign announcing “Cheese Tour”.   Now, this always puts us in a quandary as we struggle to justify the purchase of yet more cheese.  At any given time, our refrigerator is home to at least four different varieties of cheeses.  After this weekend’s purchase, we now have 7.  We are such cheese maniacs that we purchased Parmesan Reggiano even though we had a big block at home.  There is something just more intense about the flavors and textures of a freshly cut cheese.  The cheese guy was kind enough to yield to Wendie’s pleading that he cut her only the teeniest of pieces since this was to be eaten right away.  If you are familiar with the family (nay, restaurant) sized packages at Costco, you know how absolutely sweet it was of him to oblige her. 

So it was home to make the most elemental of sandwiches – potato rosemary bread with freshly cut Parmesan Regianno cheese. Yum. That was the appetizer which was quickly followed by another made with cilantro-lime shrimp, another Costco food that we have grown to love and find multiple applications for.

Large and succulent, they don’t need much else, so we try to limit the extras. On this particular sandwich, the most significant other ingredient is a small amount of mustard, so be very careful to measure that exactly, or it will completely overpower the taste of the shrimp.

Spicy Kafta Sandwich on Sourdough Bread with Black Bean Chili Sauce, Lettuce, Paprika Yogurt Dressing, Lemon, and Green onions

This kafta sandwich is very spicy due to the black bean chili. We wanted to create something with more ‘umph’ to it, but also something fresh. So we came up with adding lemon and yogurt dressing to take the edge of the chili, and the combination really worked well. This sandwich will make your hair grow long and strong, and turn boys to men and men to sheep. It also goes well with any episode of Law & Order.

Cedar Plank Smoked Salmon

Nothing is as fun to watch cook as a Cedar Plank Salmon Steak, after all, it’s not often you get to burn stuff and then eat it, much less making any kind of smoked dish. It’s also incredibly easy to do, just make sure you start with a clean BBQ, so you don’t accidentally create any ‘bonus’ fires.
