Middle Eastern Kafta Patties

At our favorite shawarma shop on Strøget in Copenhagen, known as Shawarma #1 (presumably because the address is at #1, but also because it was the first shawarma shop in Copenhagen anno 1980), one of our favorite sandwiches is the kafta burger. When ordered, you must wait patiently while the patties grill for 10-15 minutes and frequently ask yourself “did they forget me?” In 20 years, they have never forgotten me, and the wait is always worthwhile.

Living in San Diego, we wanted a way to re-create our own version of the kafta burger. So, we created this recipe, which is a mix of several other recipes found online. We wanted our own unique blend of spices; More spicy, more parsley, and of course with fennel.

Maria’s Liver Pâté

It can sometimes be very hard to find a great liver paté in your local grocery stores. Thankfully, creating one from scratch is easier than you might think, and the result is amazing. This recipe was handed down to me from my step mother Maria, who wooed everyone she knew with this magic creation. It is simply the best liver pâté I have ever had anywhere, and that says a lot. It is also very easy to make, given you can find the raw ingredients, which are not that common anymore, but which any decent butcher should be able to divine.

Danish Meatball (Frikadelle) Recipe

This is another of those recipes that we have to add to this otherwise exclusive sandwich blog. These Danish meatballs are great for sandwiches, and will be used in some of our other posts. They also happen to be the national food of Denmark, and is consumed by everyone by bulk. They are great with mashed potatoes (Which in turn is great on mashed potato sandwiches), or as a side to a salad. Total cooking time is about 50 minutes, some of which is spent waiting for the meat to cool down before frying. Simple.Easy.Good.

While this recipe is ingrained as part of the danish culture, we notices that some american blogs have also gotten a hold of it, most noticeably the excellent simply recipes which we love to read. It’s nice to see these easy and excellent frikadeller spreading out in the world.

Breakfast Sandwich with Tomato, Egg and Salami

I loooove Saturdays. They are rife with possibilities. After a long work week devoted to other people’s pursuits (namely those of my job), I look forward to enjoying the simple things that bring me pleasure. Chief among them is lazily meandering through one of  the many farmers’ markets that dot the San Diego landscape. Last weekend, it was time to revist my local market in Poway.  For me, the market is all about the fresh fruits and veggies… and the Thai coconut pancakes  – conveniently sized to be just about 1 1/2 inches in diameter, I can pop them in my mouth and eat them whole. Yum, that’s the way to start a weekend. For Anders, the market is most pleasurable when it involves the pursuit or serendipitous discovery of meat. This week, he found some salami made from locally farmed pork.  Nothing like supporting the local farmers…makes me feel connected not just to my food, but also to my community.  So in a complete diversion from my normal breakfast fruit bowl, Sunday morning’s breakfast was a tomato and hard boiled egg sandwich topped with salami slices.

Smoked Mackerel with Scrambled Eggs, Green Onions and Dill

In Denmark, smoked mackerel was formerly a delicacy reserved for special occasions such as family Christmas luncheons, or fancy dinner parties.  Danish smoked mackerel typically comes from Bornholm, which is famous for its many smokehouses.  Although made with smoked mackerel, this sandwich would work well with other smoked fish e.g. smoked salmon.

Egg Sandwich with tomatoes and onions

Classic Egg and Tomato sandwich on Rye bread, served on a lettuce leaf with onions, green onions and mayonaise. Simple, easy, yummy, and a great way to eat an egg.

This sandwich is served at many danish restaurants with a good selection of smørrebrød.

The onions brings out a light ‘crunch’ that most great sandwiches should have, but too much onion can overpower the eggs, so the green onions, milder, adds the last flavor.

Egg sandwiches are often lightly sprinkled with salt, but that is an individual option.

Spanish Omelette Sandwich

While this is really more of an omelette than a sandwich, it still has the basic makings of a classic. The Spanish omelette includes fried potatoes, onions and eggs, and is prepared in a pan in the oven. Topped with tomato sauce, fresh greens and air-dried Spanish ham, it is absolutely delicious by itself. However, put it on bread, and you have a sandwich from heaven (or Spain).
