The quintessential American sandwich is the hamburger. That despite the fact that in nearly a decade of living here, I have yet to see a burger made with ham.  Anders and I have very little experience with making burgers but as the owners of this blog, and having adopted America as our home, we have to powerful reasons to address this deficiency. And what better day to do that than on the grilling day of the year – Fourth of July.  I know, I know – I am six months late in posting this entry.

The Big Bad Wolf Burger

Sometimes a man needs to be a man, and that’s when he makes “The Big Bad Wolf Burger“. Oh yeah, 1/2 pound of patty with basil, cilantro, oven roasted garlic and blue cheese chunks. What a great 4th of July celebration that was. Inspired by the moment, I topped it off with crispy hash browns and a jackfruit/avocado rough guacamole. I can’t even begin to tell you how good this burger is, but this is so far the best burger I’ve had in my life. The jackfruit guacamole sweetness perfectly blends with the spicy mayo, the juicy patty, and the crunchy hash browns. These are the times when I think back to all the missed opportunities of my childhood to celebrate with awesome burgers, the food of men 😉

Phil’s BBQ Beef Rib Panini Sandwich

We just got married, and we were very saddened by the Icelandic cloud of ash that kept several of our Danish friends from attending our wedding. But everything can be a blessing in disguise. We didn’t tell our caterer, Phil’s BBQ, so we ended up with extra beef ribs in the freezer. While we miss our friends, at least we have ribs. And as the old saying goes, “if life gives you ribs, make rib sandwiches.” And so here we are, summer just started, and this wonderful panini (thank you Scott and Choo for that wonderful machine!!) is our first and most basic beef rib sandwich. Yum.

Corned Beef Burger with Mayo-less Coleslaw

Just for fun, we thought we would ask if Costco would publish one of our sandwiches. That was in November 2009.  Imagine our excitement when they said yes! So, due to their long production time, we were scheduled for the March issue of the Costco Connection magazine. The editor asked us if perhaps we could make a St. Patrick’s day inspired sandwich, with corned beef. Of course we could, and with a deadline of mid-january, our Christmas consisted of making several corned-beef adventures since none of us have ever really used it (turns out corned beef is quite tasty). Of our many corned beef sandwiches (some of which we have published already here), we had two favorites:

The winner was this one, a delicious burger with a side of mayo-less coleslaw. Costco unfortunately ran out of space, so the coleslaw couldn’t make it in the magazine. This is, however, the entire recipe. Let us know what you think.

Burger with Roasted Garlic Mayo and Caramelized Onions

This burger looks quite simple, but the onions make it very moist and delicious while the roasted garlic gives it a great taste. This is definitely one of our favorite burgers so far. In the next few weeks our kitchen is being renovated, and we’re not sure how we can keep up our frantic sandwich making pace. We will have access to an outdoor BBQ with a side stove, and… restaurants. Idea for BBQ sandwiches/burgers that can be easily prepared with no kitchen would be highly appreciated 🙂

Corned Beef Coleslaw With Avocado on Demi Baguette Sandwich

Well, well, it seems we are to be featured in the upcoming Costco Connection magazine (March), with one of our recipes. We’re very excited of course, so make sure you read the next one carefully :). This was planned back in December, which means we spent Christmas contemplating St. Patrick’s Day inspired sandwiches. This is the one that was not chosen to be in the magazine, but which we really loved. It’s based on corned beef naturally, and it has a little green in it. Feta-Stuffed Beef Patty Sandwich With Avocado, Red Bell Peppers On Spinach And Dubliner Cheese

You may think this is an odd looking giant patty, and you would be right. But there is a reason of course; the patty is stuffed with feta cheese. So take a step back and say “woooa”, then re-evaluate your first impression. Quite frankly, we forgot to take a photo with a cross-cut, so someday we’re going to have to make this again. Until that happens you can always try it yourself, it’s gooood.

OK, you have a point. This is perhaps not quite amazing enough to be on “amazing sandwiches”… But we liked it. “Sloppy Pope” – Beef Patty With Feta, Chunky Chili And Parsley On Pandesal Bun

A typical Sloppy Joe consists of “ground beef, onions, sweetened tomato sauce or ketchup and other seasonings, served on a hamburger bun.” Well, we decided to make our own version of the Sloppy Joe, which we call the Sloppy Pope. We use a pandesal bun, a feta-beef-patty, and our own homemade chunky chili. To top if off and make it look real pretty, we add a little parsley. As for the name “sloppy pope?” Well, let’s just say it’s a long story…

Sandwich Recipe: Corned Beef On Olive-Rosemary Bread With Muffaletta, Parmesan And Pesto

We’ve never had corned beef before, but recently decided to give it a try. This is our first attempt, and while we are not quite happy with the look of this sandwich, it tasted great. This was of course also another reason to get out ye olde burner, to give the Parmesan on top a little color. The burner was a Christmas gift from a couple years ago, and besides making flan (which we have yet to do), its usefulness is being seriously challenged. However, it’s coolness is unquestioned.
