Caesar Salad, New Years 2012 Gourmet Dinner

First of all, we’re sorry about the VERY slow release of new sandwiches and recipes, we’ve been extremely busy with other projects, but we hope to return to making at least a couple of posts per month.

Last night we had a great New Years eve dinner with our friends. It’s a tradition, and we always cook a 7-course gourmet meal, with each couple making one or two dishes, paired with a great drink/wine. As you can imagine, we’re rather buzzed at the end of the night. Since Wendie got a Thomas Keller The French Laundry Cookbook, she decided to make a Caesar Salad. The Caesar Salad was made with a crouton, which makes it a sandwich (a tiny one) in our mind!

Jamie’s Bruschetta Appetizer

This is another of Jamie Oliver’s recipes we decided to make along with the “ Grilled Eggplant Crostini Appetizer” and the “Fava Bean Crostini Appetizer” both from his delicious book “Jamie’s Italy“. It’s basically tomatoes, basil olive oil and a slice of bread. The key is as always to use great ingredients for great results. We tweaked it a little like we always do since we believe in creative liberties.

Grilled Eggplant Crostini Appetizer

Inspired by Jamie Oliver’s book “Jamie’s Italy” this is one of our favorite appetizers so far this year. It also looks beautiful. The crunchy toasted pane siciliano bread and the smoothness of the eggplant (or Aubergine as we call it in Denmark), goes very well together and fills your mouth with flavor and adventure. Eggplant seems to be largely a forgotten vegetable in the US, at least in SoCal (Southern California), and really it’s a wonderful ingredient in many dishes. People, wake up and smell the eggplant!

Wendie bought these avocados for a salad, and I couldn’t resist the temptation to toast some bread and make a few avocado appetizers. Some would call them mini sandwiches. They’re dead simple and very refreshing when the weather is hot and you have a Sunday evening on the patio with a glass of red wine and Clapton and Bob playing in the background.

Sesame Tuna Appetizer with Ricotta Cheese, Sage Infused Olive Oil and Fried Sage Leafs on “Banh Da” bread

During a recent visit to an Asian grocery store, we found some bread called “Banh Da”. Honestly, we’re not sure if that’s the manufacturer or the bread type, as it’s all in Vietnamese. It’s a rice bread, and it says on the package it’s made entirely from rice flour and water. We’re not quite sure what all the little black spots are, or how it got so shiny, but it’s all part of the mystery we guess. So, we decided to try it out with a seared salmon appetizer arrangement.

Lavash Crackers With Falafel, Pesto And Grape Tomato

We love to make lavash crackers, they are fun, fairly easy, and you can use them for appetizers like this one. This is very simply just two of our own crackers with a falafel, homemade pesto, and sprinkled with smoked paprika. We had this around midnight while watching the episode of Lost where Locke stops the islands time-switches. It was an on-the-spur of the moment little snack we just improvised with what was available, but it turned our really good. In fact, we’re now considering if these may be worth serving at our wedding reception in April (Yeah, we’re getting married). Well done Locke, we salute you with falafel !

We do love smoked salmon in our house, and it makes for great appetizers or snacks. Salmon is also fairly easy to combine with other ingredients, as long as you keep the taste influences light so as not to overpower the subtle fish taste. It works particularly well on fresh bread, or lightly toasted older revived bread.

Cardamom Crisp Roll with Rembrandt Extra Aged Gouda, Raspberry Sauce and Rajma Masala

It was one of those day were we just wanted a simple snack. Luckilly we had some leftover raspberry sauce from our Christmas panna cotta desert (which was fantastic), so with a good cheese, some cardamom crisps, and a crazy idea of adding a touch of India, we came up with this. We really liked the pairings, the rajma masala brought out a little extra zing from the cardamom, almost making it stronger.

Seared Tuna Appetizer on Cracker With Saint Faron Cheese And Balsamic Vinegar Reduction

After making a fantastic tuna sandwich, we made a few variations of tuna appetizers the next day. This is one of them, and it’s great. When working with tuna, be very careful not to overpower the subtle taste. We added a very mild Saint Faron cheese as a spread almost, and topped it with a small amount of balsamic vinegar reduction. Notice how the vinegar brings out the texture of the tuna in the pictures. This is a bite of food heaven.
