Chicken Sandwich



One sandwich I have never gotten around to liking is the chicken salad sandwich. Perhaps it’s because I was introduced to it at a deli counter. The mayonnaise was so plentiful that I could hardly taste the chicken. Since then I’ve stayed away from all chicken salads, and supermarket deli counter foods for that matter.  Still searching for a quick meal last night I decided to attempt to make my own and thereby kill two birds with a single chicken breast: rescue the chicken salad from mayonnaise hell and make a week night meal in time for Anders and I to enjoy a date night (go see the movie Unstoppable).  Both were handily accomplished.

“Little Ujin”: Roasted Duck Panini

After a visit to the local 99c Market (Asian grocery store), we got inspired by their roasted ducks and decided to make a panini sandwich. We have to admit though, the duck was of pretty poor quality which ruined the sandwich once we ate it, but if we had had a decently home-roasted duck we both feel confident this would have been a great sandwich. We also partly made this because of Ujin, who at the time had been interviewing us for an article in a Chinese youth-magazine. Respectfully we named the sandwich after her.

“Small Dragon” – Sweet Bun Roasted Duck Sandwich

Inspired by the very thought of China, we decided to attempt to make a couple of ‘Chinese’ sandwiches – at least in inspiration. The first is a roasted duck sandwich on a steamed sweet bun. You will notice the green onions sticking out of the bun… That was Anders trying to make it look like a dragon, then giving up. Instead it looks a bit like a large bald caterpillar head.

Mini Baguette: Salami Sandwich With Pesto

This is a one-bite sandwich with two thing slices of baguette bread. A bit of pesto, some farmers market salami, tomato from the garden and a touch of green onions. It is great as an appetizer or a very small mid-day snack (Which is how we enjoyed this sandwich).

Egg Sandwich with Tarragon Infused Creamy Garlic Paste and Tomatoes

I love eggs. I know there are people who can only enjoy eggs if it is combined with mulitiple other ingredients that camouflage the taste of the eggs themselves. Anders is one of those and for him, omelets is the solution. But for me there are those evenings when all I want for dinner is a meal of well-scrambled eggs. This was one of those times. This little delight was paired with a creamy garlic paste and served with tomatoes on lighty toasted English muffin.

‘Bambi’ – Mashed Potato Sandwich with Sun Dried Tomato Pesto, Green Onions, Sweet Basil Leaves, and Parmesan Crisp

After making Parmesan crisps a few days ago, I had a visions of sandwiches all somehow incorporating the crisps. Well, some turned our better than other, and here we stick to what we think are the amazing ones. This one is with a favorite ingredient, mashed potatoes, topped with a bit of sun dried tomato pesto we threw together (recipe to come), green onions, a few leaves of sweet basil from the garden, and of course the Parmesan to top it off.

By the way, if you have read a lot of our recipes, you’ll notice quite a few are on ‘rustic white bread’. For us, this means homemade bread made from more than 90% white flour. It may have extras, such as olives, cumin seeds, blue cheese, etc, but it’s essentially a white bread. What makes it rustic is that it looks, well, rustic. We’ll post a recipe later, but it’s quite involved and usually takes between 1-3 days to make, including sometimes pate fermente, biga or levain.

This sandwich we have named “Bambi” because she seems to be strutting her stuff all over the place, hoping to get picked up.

Homemade Light Yogurt Cheese with Green Onions and Roasted Garlic

I always loved the concept of being able to make our own cheeses, I mean, imagine the possibilities! Beer cheese, roasted garlic cheese, extra smelly poppy seed cheese, and then reality usually sets in. I have no clue how to make ‘real’ cheese, and while that may be a project worth pursuing someday, it’s not something you can whip together Thursday night. This is when Yogurt Cheeses comes in handy. Not really a cheese, they are easy to make, very light, and you can add whatever stuff you like. Oh, and they taste great of course. The recipe is dead simple, the cheese is cheap (if you’re on a budget), and you can use it for appetizers, snacks or just plain cream cheese sandwiches. Enjoy.

Spicy Kafta Sandwich on Sourdough Bread with Black Bean Chili Sauce, Lettuce, Paprika Yogurt Dressing, Lemon, and Green onions

This kafta sandwich is very spicy due to the black bean chili. We wanted to create something with more ‘umph’ to it, but also something fresh. So we came up with adding lemon and yogurt dressing to take the edge of the chili, and the combination really worked well. This sandwich will make your hair grow long and strong, and turn boys to men and men to sheep. It also goes well with any episode of Law & Order.

Tuna Salad on a Roll with Chili-lime Shrimp, Grape Tomatoes, Lettuce, Mustard and Green Onions

This sandwich blog is getting to me. For almost a week I’ve been anticipating a convenient time to make my famous (20 years ago in college at least) tuna salad. Each time I was about to make it, some other sandwich had to take priority (since we’re on a budget, we can’t just keep making new stuff without first eating all of the old). So, today I finally got to make it and what a blast. I got to use it on 3 different style sandwiches in just one day, and I still can’t get enough of it.

This one is a tuna salad sandwich with chili-lime shrimp and fresh lettuce and cucumber. Topped with a few cuts of green onion and 2 grape tomatoes cut in half. A bit of stone ground mustard adds the zing to the zong to the ramalamadingdong.

Tuna Salad Sandwich on Toasted Bagel with Cucumber, Tomato, Green Onion and Sprinkled with Sweet Curry

Our tuna salad sandwich saga continues with this fresh summer construction. A toasted bagel (one of those with everything on it), combined with fresh crunchy cucumber slices, tasty grape tomatoes, and green onions, sprinkled with a tsp of sweet curry. When you eat this, the smell of the curry adds to the experience before you even take a bite.

As you can see on the pictures, two sprouts from another sandwich somehow found themselves on this one. When we noticed, the pictures were taken, and the sandwich eaten, so please disregard the misplaced sprouts. They are harmless.

Know your limits… and defy them

Sometimes enough is plenty.. and then there are those days when even plenty is not quite enough.  Anders has a tendency towards sandwich superfluity and I often have to protest when I see the layers that one small slice of bread is expected to support.   I mean, even after visiting sandwich shops in Denmark and witnessing the architectural marvel that is the smorrebrod, I still think there is a limit.  I almost want to offer defense for the poor bread.  This was one of those days when I let him win and… we were both happier for it.

Egg Sandwich with tomatoes and onions

Classic Egg and Tomato sandwich on Rye bread, served on a lettuce leaf with onions, green onions and mayonaise. Simple, easy, yummy, and a great way to eat an egg.

This sandwich is served at many danish restaurants with a good selection of smørrebrød.

The onions brings out a light ‘crunch’ that most great sandwiches should have, but too much onion can overpower the eggs, so the green onions, milder, adds the last flavor.

Egg sandwiches are often lightly sprinkled with salt, but that is an individual option.

Smoked Salmon, Fresh Herbs and Vidalia Onion Dressing

This little gem of a sandwich takes about 5 minutes to put together, and tastes amazing. The fresh herbs compliment the soft smoked salmon with delicate crunchiness, all rounded of with the delicious Vidalia onion dressing (No, they don’t pay us 🙂
