Juici Patty With Coco Bread

On the scene reporting from Portland, Jamaica at the Frenchman’s cove: Juici Patty with coco bread.

In Jamaica, patties are made from a sort of think filo-dough with various fillings: Chicken (spicy), beef, lobster, shrimp, vegetable or soy. They are sold from a chains of stores spread over the island, each of which are as hunger inducing as staring at cardboard. However, don’t let their boring interior put you off.

Essentially two major chains are vying for the hearts of the locals: Tastee, the original chain, and Juici Patty, the copy-chain. Having tried both, I have to join the revolution and vote for Juici Patty. Their patties are more crunchy, and with better filling. On warning though, if you click on the link, your computer will start playing some pretty awful music without warning. Such is the power of marketing and sales in Jamaica…

For the purposes of this review, I chose a chicken patty, with coco bread. I realize this is odd, taking a patty which is already baked in dough, and then wrapping it in even more bread. But, this is the way of the local, and who am I to argue with cultural traditions. The coco bread also justifies the review, since anything wrapped in bread is a sandwich in our book.

Falafel Sandwich with Garlic-Yogurt Dressing, Lime, Pesto, Spinach and Grape Tomatoes on Ciabatta Bread with Pesto

While we do enjoy making falafels from scratch, it is a lot easier to buy them pre-made. So after an on-the-spur-of-the-moment shopping spree in the local grocery store, we found ourselves with a packet of falafels. They are quite acceptable in taste, a little wet in consistency (it’s not easy to preserve crunchiness after freezing), and overall a good experience. If you have fresh ones, by all means do use them, but for a Thursday sandwich without too much work involved, just get something like these. We find that falafel can be quite a nice change to a lot of dishes, such as salads or on sandwiches (like here).

Chunky Chili with Lima and Black Beans, Fennel, Tomatoes, Red and White Wine

If you want to make a ‘Sloppy Joe’ style sandwich, you must first make the chili. This is how we make ours! The recipe has evolved over years, since the college days when chili was the preferred antidote to pizzas. Back then, the chili was mostly meat and beans and tomatoes, but today there are a number of different beans and veggies, as well as more advanced tastes going on. We started adding wine last year, which adds a very nice flavor, and 6 months ago we started adding the sugar after we discovered that is the secret ingredient in most BBQ sauces.

Pizza Tomato Sauce

You need pizza sauce to make pizza, and this is a simple and good recipe for making your own homemade pizzas.

Pizza Sauce Recipe

  • 2 cans of skinned tomatoes
  • 1 tbs fennel seeds
  • 2 tsp sugar
  • 1 tsp paprika
  • 1/2 tsp curry
  • optionally: 1 tsp rajma masala

Heat all the ingredients in a pot, stirring until boiling. Turn the heat down, and let it simmer for half an hour simmering on low. If it is too wet to add to a pizza, either remove the extra liquid, or add a teaspoon of corn starch and stir it in, leaving it simmering until the liquid becomes thicker.

Paprika Yogurt Dressing with Red Bell Peppers, Curry, Mustard and Parsley

This is an old favorite of mine, going back to my college years. At my dorm, one of my friends’ dad worked for a large company that delivered meats and groceries for supermarkets. As a result, they were sent huge amounts of samples, which they stored in two large freezers. When he visited the dorm, he filled his car with samples for us all to enjoy. This included giant steaks, fast food pizzas, and meats of all types. So while my life up until then consisted of pizzas and chili, this was a challenge. You can’t just plop a steak in the microwave and eat it, so all we could really do was learn how to cook it right. As a consequence, our ‘kitchen’ began evolving some pretty advanced culinary tastes, and soon started to realize that there is more to life than fast-food pizza, and cooking is not really all that hard. One of the results of that time is this dressing, which we made to accompany a batch of frozen falafel. It’s easy, and complements both the falafel, but also meats very well. We will be using it in a few sandwiches soon to be released.

Maria’s Liver Pâté

It can sometimes be very hard to find a great liver paté in your local grocery stores. Thankfully, creating one from scratch is easier than you might think, and the result is amazing. This recipe was handed down to me from my step mother Maria, who wooed everyone she knew with this magic creation. It is simply the best liver pâté I have ever had anywhere, and that says a lot. It is also very easy to make, given you can find the raw ingredients, which are not that common anymore, but which any decent butcher should be able to divine.

Bagel Sandwich with Mashed Potatoes, Mayonnaise and Chili-Lime Shrimp

These shrimp are very versatile on sandwiches. They are chili-lime shrimp from Costco, pre-cooked, and they are very moist and succulent. To really try and savor their taste, we created this sandwich which combines them with mashed potatoes, lime, and a toasted bagel. The bagel gives the inevitable ‘crunch’, while the shrimps can triumph over the subtle taste from the mashed potatoes. A few sprouts just makes it look good. Of course, Anders can’t leave well enough alone, and sprinkled the whole thing with sweet curry. So much for subtlety.

Tuna Salad Sandwich on Toasted Bagel with Cucumber, Tomato, Green Onion and Sprinkled with Sweet Curry

Our tuna salad sandwich saga continues with this fresh summer construction. A toasted bagel (one of those with everything on it), combined with fresh crunchy cucumber slices, tasty grape tomatoes, and green onions, sprinkled with a tsp of sweet curry. When you eat this, the smell of the curry adds to the experience before you even take a bite.

As you can see on the pictures, two sprouts from another sandwich somehow found themselves on this one. When we noticed, the pictures were taken, and the sandwich eaten, so please disregard the misplaced sprouts. They are harmless.
