Sandwich Roll With Jalapeno Chorizo, Corned Beef, Liver Pate and Chervil

Sometimes little things can really show the differences in culture. I was visiting Denmark recently, buying the roll below at the local baker. As I was about to leave the bakery, I saw a woman coming to the door through the glass window. I opened the door to hold it for her, but instead of coming inside, she looked at me and stepped aside to let me out. In Denmark, chivalry is dead if it ever existed, and this woman realized that I got to the door first, and so I should use it first. She did not for one second consider I was holding the door for her. Being Danish, and hungry, I left the baker letting the door fall shut behind me. Perhaps this is the price of equality between the sexes, 50 years of hard struggle in Denmark. No man should hold the door for a woman, because “Don’t they think we can do it ourselves?” Danish women often think that men being chivalrous are a sign from the men that they feel superior. I guess you can argue both ways, but a glimpse into my old culture that could perhaps use an upgrade. My sister loves it when I hold the doors, so there is still hope.

Corned Beef Burger with Mayo-less Coleslaw

Just for fun, we thought we would ask if Costco would publish one of our sandwiches. That was in November 2009.  Imagine our excitement when they said yes! So, due to their long production time, we were scheduled for the March issue of the Costco Connection magazine. The editor asked us if perhaps we could make a St. Patrick’s day inspired sandwich, with corned beef. Of course we could, and with a deadline of mid-january, our Christmas consisted of making several corned-beef adventures since none of us have ever really used it (turns out corned beef is quite tasty). Of our many corned beef sandwiches (some of which we have published already here), we had two favorites:

The winner was this one, a delicious burger with a side of mayo-less coleslaw. Costco unfortunately ran out of space, so the coleslaw couldn’t make it in the magazine. This is, however, the entire recipe. Let us know what you think.

Potato Sandwich With Corned Beef Coleslaw, Spinach And Lemon, Dubliner Cheese And Garlic Ciabatta

After making our Costco Sandwiches (of which one is part of the March 2010 Costco Connection magazine), we still had some leftover corned beef coleslaw… And as the saying goes, “Naked Women Learn To Make Sandwiches and Trade for Clothes,” so we whipped up this little beaut. We love potato sandwiches, and we find that adding the cheese below the tomato changes the way the flavors hit the mouth when you bite into the sandwich. You are not immediately overwhelmed with cheese, but rather you have a chance to taste the potato before the coleslaw and cheese takes over. The pumpkin seeds in the coleslaw are fantastic by the way, and we’ve started to add pumpkin seeds to several of our sandwiches and pizzas with great success.

Corned Beef Coleslaw With Avocado on Demi Baguette Sandwich

Well, well, it seems we are to be featured in the upcoming Costco Connection magazine (March), with one of our recipes. We’re very excited of course, so make sure you read the next one carefully :). This was planned back in December, which means we spent Christmas contemplating St. Patrick’s Day inspired sandwiches. This is the one that was not chosen to be in the magazine, but which we really loved. It’s based on corned beef naturally, and it has a little green in it. We hope you enjoy, and check back at the end of February to see which one made the (cold) cut…

Sandwich Recipe: Corned Beef On Olive-Rosemary Bread With Muffaletta, Parmesan And Pesto

We’ve never had corned beef before, but recently decided to give it a try. This is our first attempt, and while we are not quite happy with the look of this sandwich, it tasted great. This was of course also another reason to get out ye olde burner, to give the Parmesan on top a little color. The burner was a Christmas gift from a couple years ago, and besides making flan (which we have yet to do), its usefulness is being seriously challenged. However, it’s coolness is unquestioned.

“The Veterinarians Midnight Snack” – Dyrlægens Natmad

“Dyrlægens natmad” as it is called in Denmark is an old sandwich like your mom used to make them. In English, it’s translated as “The veterenarians midnight snack”. It consists of liver pate on rye bread, topped with corned beef (or other salted meat), aspic, and onion rings. In this version, we start our assembly by adding lettuce at the base.
