Leftover fajitas can be a wonderful thing ! 🙂
- 1 ciabatta roll
- 4 slices of fajita steak (pre-cooked)
- 1/2 avocado
- 1 oz blue cheese
- 2 tsp hot Italian salsa verde
Cut the roll and spread the salsa verde on the top and bottom inside. Mistakenly place the fajitas on the top part (thus making it an upside-down burger). Lay pieces of blue cheese over the fajitas, and places both top and bottom in a toaster oven. Toast it until the bread is crunchy and golden brown and the blue cheese has melted. Cut the avocado in slices and place over the meat, then close the burger up and enjoy.
Pretty simple recipe, but it tastes really good. This was rather late at night and the photos didn’t quite come out the way we wanted them. Sorry about that.
