Fried Chicken Sandwich with Mozzarella Cheese, Roasted Red Bell Pepper, Mustard, Roasted Eggplant, Sweet Dill Pickles, Pasta, and Salad Dressing

What do you do when life gives you fried chicken? Well, our answer is to make fried chicken sandwiches of course (What else would you expect from this blog). This is a great ‘leftover’ sandwich for the day after, and as you can see we added a little bit of everything (including pasta, which we can consider optional, but we had to try). If you wonder why the cheese is melting up, it’s because we toasted the bread opened, and then put the top on :-). This is also one of those sandwiches that require an extra hour on the treadmill afterwards, so proceed at your own risk.

Fried Chicken Sandwich Recipe

  • 1 Roll (This one is from Costco)
  • 1 tbs Vinaigrette
  • 2 slices mozzarella
  • 1 slice roasted red bell pepper
  • 1 slice roasted eggplant
  • 1 piece deep fried chicken, but without any bones.
  • 2 tbs pasta (optional as it doesn’t add much taste. We were experimenting; give us a break).
  • 2 tbs mustard
  • 5 sweet dill pickles
  • pepper

Cut the roll in half, but try and leave the halves together by not cutting all the way through. Pry open the bread.

Top part

Spread 1/2 tbs salad dressing on each half of the bread, and let it soak into the bread.  Place the mozzarella, then the slice of roasted bell pepper.

Bottom part

Start with roasted eggplant, then optionally the pasta, and the boneless deep fried chicken.

Toast the entire sandwich until the bread is golden brown and the cheese has melted.

After removing from oven, spread the mustard on the top half, and they layout the sweet dill pickles. Sprinkle with pepper to taste. Below is a photo of the sandwich at this stage. Now, in one carefully orchestrated motion, bring the two halves together, and you got yourself a sandwich!
